Queso and Chicken Enchiladas |

Ingredients
2 canned chicken
2 8oz pkgs of cream cheese
2 C salsa
12 med size flour tortillas
1 jar monterey jack queso
2 C colby/jack shredded cheese
Directions
Soften the cream cheese , I usually warm it in the microwave for about 40 sec. so it mixes throughly. Put the cream cheese and salsa in a bowl mix good. Drain the canned chicken and break up into the mixture. Mix. Spray a baking sheet with non stick spray. using 12 of the tortillas fill center with mixture and fold one end over the other and place in the baking dish. Spread the queso over each enchillada sprinkle with the shredded cheese and put in the oven at 350 for about 20 to 30 mins. or until the cheese is melted completely. Serve warm.

This is such and easy dish. My family and guests love when I make these with the Queso on them.
