Place the potatoes half at a time in the microwave on 10 to 15 mins or until done completely through. Let them set until cool enough to peel and cut into chunks. Put about a Tbsp of oil in the bottom of the skillet and brown the potatoes only a few at a time just covering the bottom of the pan, if you crowd them they will get soggy instead of crispy. Adding a little oil only when needing to keep the bottom of the pan cover while frying the potatoes. After all of them are fried place them in a baking dish pour butter over them mix well. Add salt and parmesan and toss together. Serve warm. I placed mine in the oven for about 10 to 15 mins to warm them up.
